Zesty Kale Salad with Walnuts & Raisins
Ingredients
- 1 bunch of kale
- 1 bell pepper
- 1/2 cup onion
- 1/2 cup chopped walnuts
- 1/4 cup raisins
- 2 garlic cloves
- splash of lemon juice
- salt & pepper to taste
Instructions

Saute pepper, onion, and one garlic clove.

Chop and steam kale.

Add kale, chopped walnuts, raisins, lemon juice, salt, pepper and sauteed green pepper and onion into a bowl. Stir to combine.

Press fresh garlic clove and stir.

Serve as a side or double to recipe for a healthy and easy meal.
