Healthy peanut butter granola clusters that tastes just like peanut butter cookies! This easy, naturally vegan recipe has no added oils or refined sugars.
Heat oven to 325 degrees F. Line a baking sheet with parchment paper.
In a small bowl, mix together the peanut butter and maple syrup. Heat mixture in microwave until melted and smooth, (15-25 seconds).
In a larger bowl, combine the oats, cinnamon, nutmeg, and salt. If using peanuts, chop and add to mixture. Set aside.
Take the peanut butter and maple syrup mixture and add in the vanilla extract.
Add wet ingredients to the oat mixture and stir to combine, making sure all of the oats are coated and forming clusters.
Spread onto baking sheet and bake for 15-25 minutes or until golden.
Remove from oven. Let cool completely before handling.
