Almond crusted cauliflower nuggets. Cripsy, flavorful plant-based nuggets with a delicious almond and bread crumb crust. These cauliflower nuggets are healthy, oil-free, plant-based and baked to perfection.

These delicious turmeric, almond and bread crumb crusted cauliflower nuggets are packed with flavor. The almond and bread crumb breading perfectly adds a crispy outside to the nuggets, while the batter is composed of great combination of flavors, including garlic, onion, turmeric, paprika and nutritional yeast.

On top of being tasty, these plant-based cauliflower nuggets are completely healthy. They are oil-free and made with only wholesome ingredients. In addition, they are oven-baked. These nuggets could also be easily made gluten-free, simply use gluten-free bread for the bread crumbs.

I used Daily Crunch’s new Golden Goodness sprouted almonds in the crust of my cauliflower nuggets. These almonds are perfectly crunchy from being soaked. They have a delicious ranch flavor paired with all the incredible health benefits of turmeric. You can check out this flavor and other Daily Crunch Snacks here. They make for a great healthy snack or work wonderfully in recipes like these nuggets.

Serve these nuggets as an appetizers with some plant-based ranch for dipping. They also pair perfectly with our oil-free oven-baked french fries.

Turmeric Almond Crusted Cauliflower Nuggets

Ingredients

  • 1 medium cauliflower
  • cup almonds ( I used Daily Crunch Snack Golden Goodness Sprouted Almonds )
  • 2 pieces bread
  • ½ cup almond flour
  • cup almond milk
  • 1 flax egg
  • ¾ tsp paprika
  • ¾ tsp garlic powder
  • ¾ tsp onion powder
  • 1 ½ tsp nutritional yeast
  • ¼ tsp turmeric
  • ¾ tsp salt

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

  2. Start by making your flax egg. Take 1 tbs of ground flax and mix with 3 tbs of warm water. Set aside.

  3. Add almonds to a food processor and pulse until fine. Make sure to not over process as this will result in making almond butter.

  4. Put almonds pieces in a small bowl. Toast two pieces of bread and add to food processor. Pulse until fine.

  5. Combine bread crumbs and almonds. In a different bowl, whisk together almond flour, almond milk, flax egg, paprika, turmeric, garlic powder, onion powder, nutritional yeast and salt.

  6. Chop cauliflower into bite-sized pieces. Dip each individual piece into the wet mixture and tap off excess. Roll cauliflower into the almond and bread crumb mixture until covered and tap off excess.

  7. Place the individual nuggets onto the baking sheet. Bake in the oven until golden, roughly 25-30 minutes.

Meaty Plant-Based Cauliflower Bean Chili

This plant-based cauliflower bean chili is the best, most delicious wfpb chili. The cauliflower ‘meat’ perfectly replaces what would be ground beef in traditional chili. Hearty and filling, this chili is the perfect combination of flavors and is sure to become a favorite for everyone.

Chili is a fall staple. It is perfect for cool nights when you need something warm and hearty. This chili recipe is so. dang. good. It is seriously THE BEST plant-based / vegan chili, especially paired with a piece of wfpb cornbread. Even meat-eaters are bound to love it!

What makes this chili meaty and a close resemblance to traditional chili recipes is the addition of a plant-based ‘meat’ made with cauliflower. This is the same recipe I use to make cauliflower walnut tacos. The only thing I do differently is that I don’t make it with a potato. In chili, it resembles the texture of ground beef while also adding some really great nutritional value.

This cauliflower chili recipe is bound to be your new favorite way to make chili.

This recipe does make a lot of chili, which makes it perfect for big families or large crowds. If it makes too much, you can always half the recipe or just throw the rest in the freezer. It’s perfect for freezing and having a heat and eat dinner saved for later. Great for nights when you don’t feel like cooking.

Additionally, having a side of oil-free, wfpb cornbread made in a cast iron skillet is a must-have when it comes to chili.

However, something else that is really great with this recipe is french fries. Yep, for delicious chili cheese fries use this chili along with these homemade french fries and my plant-based queso. This makes for an insanely good combination that is also completely healthy! In fact, it is full of vegetables and made with no oil. You could also do the same thing with carrot dogs.

Meaty Plant-Based Cauliflower Bean Chili

Ingredients

  • 1 batch cauliflower meat (made without potato, recipe in instructions below)
  • 1/2 lb dry black beans
  • 1/2 lb dry red beans
  • 1 can diced tomatoes
  • 1 can tomato paste
  • 2 tbs chili powder
  • 2 tsp paprika
  • 2 tsp smoked paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper
  • salt and pepper to taste
  • 2 tbs masa

Instructions

  1. Prepare your cauliflower 'meat'. Find the recipe here.

  2. If you are making your beans in an Instant Pot, cook them while this is in the oven.

  3. Take your cooked beans (with the liquid) and add to a large stock pot over medium heat. Mix in all seasoning, diced tomatoes, tomato paste, and masa.

  4. Then, mix in cauliflower meat. If the mixture is too thick add a few cups of water or vegetable broth until it has reached desired consistency. Let everything simmer together for about 5 minutes.

  5. Top with red onions, jalapenos, and avocado then serve with a slice of cornbread.

A plant-based version of an authentic, Cajun dish. This plant-based dirty rice is full of healthy ingredients and great flavors. It works perfectly as the main dish or as a side. In addition, it is super easy to make and is a great option for a healthy weeknight dinner. A meat-less and much healthier version of a Southern favorite.

Dirty rice is a Cajun dish originating in southern Louisiana. It is typically made with white rice and chicken liver and gizzards, ground beef or pork. The process of cooking the meat with the white rice gives it a “dirty” look, hence the name dirty rice.

This recipe, however, is full of flavor without any of the animal products. Instead, this completely plant-based dirty rice is made using brown rice and a cauliflower “meat” similar to this cauliflower taco meat. The cauliflower mixture adds a great texture and boost of flavor in place of what would typically be a combination of various types of meat.

Using brown rice gives it the ‘dirty’ look. Additionally, it is whole grain that is nutrient dense and great for heart health. Paired with the cauliflower, this recipe is packed with fiber that aids in digestion while also promoting fullness.

Vegan/ Plant-Based Dirty Rice

Ingredients

  • 2 1/2 cups brown rice
  • 1 small cauliflower
  • 1/2 cup chopped walnuts
  • 1 bell pepper
  • 1 onion
  • 3 stalks of celery
  • 8 button mushrooms
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1/2 tsp thyme
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 2 garlic cloves
  • 1-2 tbs chopped parsley

Instructions

  1. Preheat oven to 375°.

  2. Start cooking rice. See instructions below.

  3. Combine cauliflower, walnuts, onion, bell pepper, celery, and mushrooms in food processor. Pulse until everything is finely chopped.

  4. Add all seasoning (except garlic cloves and parsley) to cauliflower mixture and stir until well combined.

  5. Cover a large baking sheet with parchment paper. Evenly pour mixture onto sheet and bake in the over for 30-35 minutes; stir halfway.

How to Cook Brown Rice

  1. Put rice into a strainer and rinse thoroughly.

  2. Add rice to a pot on the stove and cover with water. You are going to be cooking the rice like you would pasta. This further removes any toxins from the rice and cooks it perfectly.

  3. Let boil on medium heat for 45 minutes or until the rice is at desired textured.

  4. Once it is finished cooking, drain the water and rinse the rice again with a strainer. Put the rice back in the pot and continue with recipe.

  5. When everything is finished cooking, combine rice and cauliflower mixture into large bowl. Add pressed garlic cloves and finely chopped parsley. Stir to combine.

  6. Serve as a side dish or the main course. Top with Louisiana Hot Sauce.

I know what you are thinking.. cauliflower and walnuts in a taco? While it may sound completely out of the ordinary, this recipe make a perfect plant-based taco meat substitute. If you are new to a plant-based diet, you are soon going to learn that in order to truly enjoy it, you're going to have to step outside of the box. Trying new things that may seem odd but will quickly become your favorite is a major part in becoming plant-based. Those who have been plant-based for a while know all about trying new and different things.

This recipe is great for sneaking in vegetables. I personally don't particularly like mushrooms, but try to include them in any recipe in order to get all of the nutrients and benefits of them.  However, in this recipe you do not even notice them. This being because they are ground up within the cauliflower and walnuts.

The Problem with Traditional Tacos

Traditional tacos made from ground beef are high in saturated fat. Red meat also has links to causing different types of cancer, as well as heart disease. In turn, this plant-based taco meat contains cauliflower which is high in fiber while the walnuts add protein and a good fat. Mushrooms are loaded with nutrients while being another source of protein and fiber. Just by changing up a household recipe, you are cutting out ingredients that could be harmful to you and your family's health. At the same time, you are adding nutrient dense foods that help to prevent and fight off harmful diseases. 



I add this taco meat to our homemade blue corn tortillas, though if your in the mood for burritos, wrap them up in these oil-free whole wheat tortillas. I just put them in the oven for a few minutes using this taco holder that shapes and crisps them. Perfect for homemade taco shells. I also love to add fresh homemade guacamole, homemade hot sauce, and some fresh veggies. Feel free to add any of your favorite taco toppings!

Ingredients

  • 1 small head of cauliflower (or 1/2 a large head)
  • 1/4 cup walnuts
  • 1 potato optional
  • 8 button mushrooms
  • 1/2 cup cilantro
  • 1 bell pepper
  • 1 onion
  • 1 garlic clove
  • 1 tbs chili powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp coriander
  • 1/2 tsp smoked paprika
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/8 cayenne pepper

Instructions

  1. Preheat oven to 375° F

  2. Pulse cauliflower in food processor until fine. Pour into a medium sized bowl.

  3. Pulse walnuts; add to cauliflower.

  4. Peel and chop potato into small pieces; add to cauliflower mixture.

  5. Add all seasoning.

  6. Pour mixture onto parchment paper lined baking tray and bake for 35 minutes; stir halfway.

  7. While the mixture is cooking, chop and saute bell pepper and onion.

  8. Add chopped mushrooms and cilantro; saute.

  9. Once the cauliflower is done, add the bell pepper and onion mixture.

  10. Serve in homemade tortillas or taco shells.
